Abstract: Non-Gaussianity in the statistics of cosmological perturbations generated e.g. during a phase of inflation, represents a signature of the interactions among fields in the Early Universe, hence it gives information on the physical processes occurring at the highest accessible energies. I'll review the present status of modelling of and searching for primordial non-Gaussianity. After introducing the models for non-Gaussianity generation during inflation, I'll discuss the search for non-Gaussian signatures in the Cosmic Microwave Background and in the Large- Scale Structure of the Universe.
