 hysics beyond the Standard Model\, offering unique opportunities to invest
 igate possible manifestations of quantum gravity through their propagation
  and oscillations. Such manifestations include violations of Lorentz invar
 iance\, modifications of neutrino kinematics\, and quantum decoherence eff
 ects arising when neutrinos are treated as open quantum systems. In this t
 alk\, I will present recent developments in the search for quantum-gravity
  effects using neutrinos detected by IceCube and KM3NeT. I will conclude 
 with a brief perspective on the role of Large Language Models (LLMs) in co
 nnecting theoretical quantum-gravity models with experimental observables\
 , and their potential to support the exploration of new phenomenological s
